WINTER PLUM CAKE

This recipe is ideal to use up the frozen plums in your freezer….in fact any frozen stone fruit in your freezer.

Butter then flour a 20cm springform tin or use a cake liner

Slice up your slightly thawed but still firm stone fruit from your freezer…you will need quite a bit plus you can pile it up, I slice my plums that I have frozen in halves into quarters.

Mix up the sugar topping 1Tblsp raw sugar to 1 tsp cinnamon…can be doubled if you like it sweet and spicy.

Use 150grm flour and 2tblsp fine coconut
1tsp baking powder
1 tsp. cinnamon
150g sugar
120g melted butter
2 eggs
Beat everything together with a wooden spoon until forms a batter, pour into prepared tin, pile on the fruit to cover batter completely, sprinkle with the cinnamon sugar you have prepared earlier.
180 degrees fanbake for 50 mins.
Can be served as a cake or a pudding with yoghurt or whipped cream
