CHIMICHURRI SAUCE
A delicious vivid green sauce ideal to serve with BBQ meat, fish and vegetables.

Ingredients
  1. 1/2 cup flat leaf parsley chopped finely
  2. 1/4 cup coriander chopped finely
  3. 1/4 cup mint chopped finely
  4. 2 cloves garlic crushed
  5. 1/2 tsp. smoked paprika
  6. 1/4 tsp. ground cumin
  7. Pinch chilli flakes
  8. 2 Tbsp. Red wine vinegar
  9. 1/3 cup olive oil
Instructions
  1. Combine in a bowl and season. Drizzle on the meat, fish or vegetables once cooked and sliced.
Notes
  1. This sauce is especially nice on hot meat but I have used it on cold as well.
