A delicious vivid green sauce ideal to serve with BBQ meat, fish and vegetables.
- 1/2 cup flat leaf parsley chopped finely
- 1/4 cup coriander chopped finely
- 1/4 cup mint chopped finely
- 2 cloves garlic crushed
- 1/2 tsp. smoked paprika
- 1/4 tsp. ground cumin
- Pinch chilli flakes
- 2 Tbsp. Red wine vinegar
- 1/3 cup olive oil
- Combine in a bowl and season. Drizzle on the meat, fish or vegetables once cooked and sliced.
- This sauce is especially nice on hot meat but I have used it on cold as well.
